Unfortunately there is no way to shut down the activity feed, though you shouldn't have to worry about privacy as nothing on your activity list identifies you personally.
Activity just shows other players things like what kind of scores you shoot, how you did in tournaments, who you become friends with along the way, when you set personal records and displays game awards that you've won.
