I'm relatively new here. Is there a way during a practice round to set up a particular shot you want to practice - say a 100 yd shot from the heavy rough - or do you just get to "practice" whatever happens to show up during your round? In a similar vein, during practice is there any way to retake a shot using a different club? Thanks.

Only way you can retake a shot is if you hit it OB or it goes for a swim , not recommended for the expense of a new virtual golf ball :)

You can however  take up to 10 shots on most holes in practice round mode . Just keep slamming it up and down the fairways until your shot quota is reached, than move on to the next and whail away at another 10 shots or so , ect  .

You can also practice putting by aiming to a target...as long as the ball does not go in the hole you can putt until you reach the max stroke limit.  As mentioned above, remember that premium balls can be lost and they do wear out as in rated rounds.   The good news is you will get Level points for each stroke and a bonus if you compete the round.
